This is a bit of a very late post. This dinner was my last dinner in Cebu, just after Christmas. Scape Skydeck view in Mactan Island, Cebu.

After our yummylicious SUTUKIL late lunch , we decided to go to the Lapu-Lapu Shrine which is beside the sutukil restaurants. Some of the family members surprisingly have not been here so they want to have a look. I have been here though several times. Now my smart-aleck nephew was quick as a fox to snatch a hat from the handicraft stall near the sutukil restaurants and declared that IT IS HIS. The father (my brother) was left with no choice to haggle but to pay the smiling vendor. He just made an easy sale =) Hiya little boy, the hat looks good on you. Here at the sutukil restaurants you can also find vendors selling native Cebuano products. Cebu is known for its sweet mango among other things, i.e. lechon (whole grilled pig), shell craft, guitars and many more. My parents had a shell craft business when I was little. SUTUKIL is a typical Cebuano way of cooking which stands for SU means Sugba (grill), TU means Tula (soup) and KIL means Kilaw (pickled raw). So when Cebuanos say to the waitress that they want a certain fish cooked the sutukil way this means that the fish will be prepared and cooked in three different styles. The head and some parts of the body of the fish are usually made into soup, the rest will be for pickling (it is a bit similar to the Peruvian ceviche) and then the tail grilled. Thus with only one fish you get to taste three different types of dishes! Isn’t that just cool huh? SUTUKIL in Mactan  We have just arrived from Hong Kong here and my brother, sister-in-law and the smart-aleck nephew picked the family up in the airport. Cebu’s airport is located in Mactan Island and its official name is actually Mactan Cebu International Airport. Someone suggested, I forgot who, that we go to Sutukil for our late family lunch.
