Me and My Salads


The in laws came over, had tea with us (we had Darjeeling) and helped install the 2-meter silver mirror in the dining area.

While we were on the discussion of what’s for dinner tonight, we touched on the topic of salads. The Dutch father said that everyone in the Dutch family used to call the Dutchman konijn (bunny), pronounced as co-nine, because he cannot stop munching on carrots, lettuce and anything green. Upon hearing this, I wondered if the Dutchman had something to do with the last missing carrots in the fridge... hmm...

Thus, every time I make dinner, I always make sure that I make a bowl of green salad, otherwise the Dutchman’s evening will not be complete. He might have salad nightmares haha.

Here are some of the salads I made from the last week or two. The greens were almost the same because I normally buy 1 type of salad greens per week. Other times, I buy Romaines, Ruccolas, or something else.

Exotic Mediterranean

This one we just ate tonight together with our Burritos. Everyone loved it, including me, hehe.

Ingredients:iceberg lettuce, gala apples, pomodori secchi dried tomatoes, green and black olives, green bell pepper, spicy cervelaat (Dutch dried sausage) and cucumber

Dressing: natural salad dressing, extra virgin olive oil, and salad herbs

Mozzarella Greens

Ingredients: iceberg lettuce, cucumber, fresh tomatoes, and mozzarella cheese

Dressing: extra virgin olive oil, salad herbs, italian salad mix and a little bit of water

Red Garden Salad

Ingredients: iceberg lettuce, cucumber, onions, fresh tomatoes, and ripe big strawberries

Dressing: extra virgin olive oil, and natural salad dressing

Spinach Feta Mix

Ingredients: fresh spinachleaves, fresh tomatoes, green olives, cucumber, and feta cheese

Dressing: extra virgin olive oil, balsamic vinegar, sugar (or honey), mustard, dash of paprika and four seasons pepper

Fresh!

Ingredients: butterhead/bibb lettuce, fresh tomatoes, cucumber, green olives, and olive oil cured garlic

Dressing: extra virgin olive oil, oregano herbs, and vinaigrette

  2. though i'm not a vegetarian (far from it! give me a rare steak, please!), i love having all kinds of salads throughout the year; however, i'm almost an exclusive salad-grazer during the summer.

    i enjoy all types of salads: green salads (tasty with edible flowers), noodle salads (not yet macaroni elbows), dessert salads, cold/fruit salads, warm/pasta salads, and, even, ice-cream salads!

    plate me an extra large portion of the mozzarella greens, plz!

    try this simple coconut ambrosia salad (makes 12 servings; most delicious and refreshing after a heavy meal):

    * 1 (11 ounce) can mandarin oranges, drained
    * 1 (8 ounce) can crushed pineapple, drained
    * 3 1/2 cups frozen whipped topping, thawed
    * 2 cups shredded coconut
    * 2 cups miniature marshmallows
    * 1/2 cup milk
    * 1 cup maraschino cherries

    (substitutions: i typically get whatever fruits are in season at the farmer's market.)

    direction
    1. in large bowl, combine the oranges, pineapple, whipped topping, coconut, marshmallows and milk.
    2. mix together well and chill 1 hour before serving. garnish with cherries and mint sprigs.

    Exotic mediterranian is the type of salad I make almost every night. Back in Asia, I eat mostly cooked vegs. except when dining in Italian and French restaurants. I so love and enjoy green salads now more than I did a year ago.

  6. Sha, I don't have a blender yet and other kitchen appliances because i hate them scattered in my kitchen counter. I think I am one of the few people who hate displaying them lol. I even hide my coffee maker and rice cooker in the cupboards! And speaking of cupboards, I dont have enough space because I hide everything there. Argh. I want to buy many things for the kitchen but I don't want to because of that. I'm going to overhaul my cupboards and see. But I need a blender (and many other things lol).

    Nam, Thanks for the recipe but arent those calorie-fic? Whipped cream, marsmallows and milk! Oh my, I could probably only eat 1/4 of the serving, hehe. I am not a vegan but I could not handle heavy stuff (dairy, sweets, meat, carbs), they make me sick in my tummy if I eat more than is enough for me, usually very little. The Dutchman thinks I have a strange stomach haha.

    Ara, I love cooked eggs for breakfast (we ate them earlier) but they are good for cesar salad toppings. I rarely make cesar salad because I find them heavy due to its dressing, but its one of Dutchman's faves.

  7. Ah! Stop it, you're making me hungry!! That all looks sooooooo good!! I hardly eat salads, I just make the ones like 'huzarensalade' when it's Xmas or summer or sth, but just with mashed potato, cucumber, salt, mayonaise (lots of it) and tomato! Oh, and don't forget I love stuffed eggs!! Mix the yellow bit with mayonaise and salt, yummie!!

    i love salads too... one of my favorites for summer is the apple-pear-avocado green salad. ingredients: 1 pear, 1 apple, 1 avocado, feta cheese, pine nuts (roasted), kropsla or lettuce.

    for the dressing: 1 spoonful each of honey, mustard, olive oil, vinegar, mayonaise.

    toss together, and sprinkle with pine nuts.

    Haha, well, I think the rest of the world is cursed for their love for ketchup! I hate ketchup!! I don't understand why nobody else likes mayonnaise??

    elentari, yeah, i am not into ketchup nor mayo, though i "sometimes" have them with patat which i rarely eats haha (maybe once in every 3 months). the dutchman is going gaga with mayo too, its a dutch thing i swear. i just stare at him in disbelief everytime we have rice for dinner and he adds mayo in it. what the heck? eww

  12. i hate to be the one to break it to you: it doesn't look like you need to worry about your figure; you're in fine shape.

    what an unusal statement to make: if I eat more than is enough for me. a few months ago, my friend from nigeria made the same comment (we were talking about meal portions). i've noticed this is a very non-US way of dining. as you know, obesity is a growing at an alarming rate in the US. We are not taught to stop eating when we are filled. We continue to eat as if there's no tomorrow .. perhaps is a hyper-reaction to the depression era when we had to ration food .. ok, i'm just making excuses for our gluttony. according to dante's, the gluttons end up the sixth level/circle of hell .. see y'all there, bring sunblock and lemonade!
